The next time you’re looking for a way to turn ground poultry into a healthy dinner that’s really juicy, try this family-friendly Avocado Turkey Burger. It’s a hit every time!


1 avocado, mashed

1 small onion, minced

¼ cup light mayonnaise

2 teaspoons lemon juice

1 teaspoon kosher salt

1 teaspoon garlic powder

1 teaspoon dried parsley flakes

½ teaspoon black pepper

1½ pounds dark ground turkey

¼ cup white whole wheat flour

buns, optional, for serving

vegetables (such as lettuce, tomatoes, and pickles), optional, for serving

Spicy Mayo, optional, for serving

Variation: This recipe works nicely with ground chicken as well as turkey. I prefer ground dark chicken, which stays moister than ground white chicken.

  1. In a medium bowl, mix together avocado, onion, mayonnaise, lemon juice, salt, garlic powder, parsley flakes, and pepper. Stir until smooth.
  2. Add turkey and flour; mix until combined.
  3. Form mixture into 6-8 patties; fry or grill on a lightly greased frying pan or grill pan for about 5 minutes per side, until cooked through.
  4. Serve hot, on buns, optional, with your choice of vegetables and Spicy Mayo, if desired.Note The raw turkey mixture is much looser than traditional burger patties. The trick to keeping them from breaking apart while cooking is to wait a few minutes to flip them, until the patty has firmed up.

Plan Ahead: Prepare the mixture and freeze patties until ready to serve. Defrost; grill fresh.
