May We Recommend: Banana-Nut Butter Balls
A bonanza of very ripe bananas on the closeout shelf at our local supermarket inspired me to try a few recipes for pop-in-your mouth snacks that are nutritious and portable. This is a one-bowl recipe that I make at night to pack in a lunch box or bag to take to work, school, or on a day hike. They keep in the refrigerator and can be stored in a freezer for a week.
Bananas and dates provide potassium and natural sweetness; the flaxseed and oatmeal add fiber. Peanut butter is rich in protein, potassium and fiber. For anyone allergic to peanuts, substitute almond butter. I experimented using steel-cut and rolled oats. Steel-cut oats add a bit more crunch. This is a great recipe to make with your kids that allows for a little creativity and takes very little time to make or clean up.
